How to recognise quality honey?

There is a lot of honey on the shelves and the differences are not visible at first glance. Here are a few simple signs we pay attention to.

1. Crystallisation is natural

Real raw honey crystallises over time — it becomes thicker, cloudier, sometimes completely solid. That is a natural process and does not mean the honey has lost quality. The speed depends on the type: wildflower and meadow honey crystallise faster, acacia very slowly, and chestnut stays liquid for a long time because of its composition.

Honey that stays perfectly clear and liquid for months has often been heated and filtered. Crystallised honey is easy to return to a liquid state: place the jar in warm (not hot) water.

2. Read the label

The label of raw honey should carry:

• the name and type of honey
• the name and address of the beekeeper or farm
• the country of origin (for us: Croatia)
• the net weight, the filling date and the best-before date
• storage instructions (in a dark place, below 25 °C)

If the label says “blend of EU and non-EU honeys”, it is industrial honey of unknown origin.

3. Taste and aroma reveal the season

Raw honey of the same type will not be the same every year. Wildflower honey from the spring bloom is different from the summer one, because the bees visit different plants. That variety is a sign that the honey comes from nature, not from a standardised process.

4. Raw honey is not overheated

“Pure Raw Honey” on our label means that after extraction we do not heat the honey or filter it aggressively. Tiny traces of pollen and wax stay in it, and with them the aroma. That is why the honey is sometimes cloudier — and that is fine.

5. The best test: know who you buy from

No home “test” (a drop on paper, dissolving in water) is reliable. The safest way to know what you are buying is to buy directly from a beekeeper you can call, visit and ask.
